Professional sharpening machines      


There are several effective professional knife sharpening machines available today.

They include these highly regarded machines:

F. Dick Professional Knife Sharpener SM-111 
This machine is produced by the legendary German knife making company F. Dick.  It uses the standard three stages to produce very sharp cutting edges.  Water cooled grinding wheels and knife holding magnets produce a precisely controlled cutting edge and contra-rotating honing wheels remove the burr.  It has the capacity to sharpen about 60 knives a hour.

F. Dick  Grinding Machine SM- 160 T
This is a stainless steel machine for sharpening kitchen knives including cleavers and knives with serrated edges. It uses a water-cooled emery belt and lamellar grinding  wheel for the grinding stage, and finned brushes for honing and polishing the cutting edges.

It is used by companies providing professional knife sharpening services.

The following three machines are manufactured by CATRA, the highly respected specialist sharpening organization in Sheffield in Britain.


CATRAsharp Powered Knife Sharpener

This machine, about size of a shoe box, produces very sharp and long lasting cutting edges.   It uses a spiral grinding method to produce a unique ‘Gothic Arch’ convex cutting edge with an included angle of 30 degrees. The grinding wheels are made from boron nitride which allows for cool sharpening.

A heavily worn knife can be sharpened in 30-40 seconds.

CATRA I 100

This is a compact sharpening machine suitable for users who want a machine capable of sharpening hundreds of knives per day. The machine uses different grinding wheels to produce different grinding bevels.  The angle at which the blades are sharpened is determined by the diameter of the grinding wheel.  Knives can be sharpened with included angles of between 25 degrees and 70 degrees.
